Stir Fried Udon Noodles

We are all time poor these days. The take-away stalls probably know many of us by our first name. Perhaps our favourite home delivery number is on the speed dial. Otherwise, there's always the frozen food option - Lean Cuisine, McCains etc. Then there's the instant noodles too - quick and easy!

Here's a simple recipe - a more nutritious meal, in a short time. :)



Stir Fried Udon Noodles
for 2-3 people

Ingredients:
  1. 500g udon noodles
  2. 1 bunch of leafy green vegetable (eg. bok choy)
  3. 1/2 of a small head of broccoli, cut up
  4. 1/2 of a carrot, sliced
  5. 1/2 of a red capsicum, sliced
  6. 1/2 an onion, chopped
  7. 2-3 cloves of garlic, diced
  8. 1/2 of a chilli, sliced (optional)
  9. 2-3 dried shiitake mushrooms, soaked and sliced
  10. 250g fresh prawns
  11. 2-3T of light soy sauce
  12. 3g of dashi powder
  13. 2T of Chinese rice wine /Japanese mirin wine
  14. Salt to taste



Method:
  1. Boil a saucepan of water and blanch the vegetables (broccoli, bok choy, carrot and capsicum).
  2. Boil the noodles briefly thereafter, and drain dry.
  3. Add vegetable oil to the wok.
  4. Wait for oil to be heated.
  5. Add prawns and stir fry briefly. Remove before prawns become fully cooked. Set aside the prawns and the prawn juice.
  6. Give the wok a quick clean, and add some oil again.
  7. Wait for oil to be heated.
  8. Add the chopped garlic and stir quickly to avoid burning them.
  9. Add the chopped onions, stir quickly.
  10. Add the sliced chilli and mushrooms. Stir fry.
  11. Add the prawns and its juice back into this mixture, and cook.
  12. Add the blanched vegetables.
  13. Add the noodles and combine. Add the wine, soy sauce, dashi and salt and stir through.
  14. Plate up and enjoy! :)
Note: Commercially available minced garlic can be substituted. Can also add/substitute vegetables with cabbage and the meat with chicken/pork. Easy breezy! :)
